I made salsa tonight that turned out really good. I figured I would share it.
Ingredients:
2 mangos, 4 jalipenos, 3 tomatoes, 2 cloves garlic, fresh cilantro (coriander), 1 kiwi fruit, 1/2 sweet onion
I grilled the jalapenos and tomatoes outside on the charcoal grill. When the tomatoes were soft I peeled the skin.
I put the jalapenos, mangos, tomatoes, garlic, some cilantro, and peeled kiwi in blender and turned it on until there was a slightly chunky consistancy.
I then added the onion, chopped, along with a lot more cilantro (i really like cilantro) and some lime juice. I guess the juice of 1 lime.
Mix. Eat with chips or as a sauce on whatever you like. Salsa is good on everything.

It has been a while su=ince I have updated my blog, so I am going to try to make sure it is worth your time to read. So, rather than my usual rambles, I am going to dedicate some space to discuss my various travel experiences and how they have effected my life. I hope you find them interesting.
I am going to start with my trip to Bangkok, Thailand in March 2005. Though it was not my most recent international excursion, it was a trip that had a profound effect on me. I have loved Southeast Asia and it’s inhabitants since my first experience there in 1990-1991 to the Philippines and Singapore.
The fantastic experiences of the first time in Asia had been placed in the back of my mind and nearly forgotten as I pursued my education and "the American Dream" (nice house, nice car, a career). My success in those matters is debatable.
While I was there I wanted to check out Chulalongkorn University. In my unrealistic dream, I would like to study in their Southeast Asian Studies program. It is a dream that I am not likely to make a reality, but this dream has inspired my thirst for knowledge. I may not get the degree, but knowledge is more important right?
While I was at the university, I stopped in the bookstore, just to see what they were reading in some of the classes. I found a book about Burmese migrant workers in Thailand, and their experiences. The title escapes me right now, but this is without question, one of the most important books I have read. Prior to this I doubt I could have located Burma (Myanmar) on a map. Since then, I have read everything I can get my hands on that will help me to learn more about Southeast Asia. My eyes have been opened to the world in ways that would not have occurred if not for the few days spent in Thailand ant the book that i found in the bokstore.
There is much more that I would like to learn. I believe my future is going to be, in some way, associated with Asia, preferably working with a charitable organization or creating my own.
I have looked at numerous organizations that offer the opportunity to "volunteer" for a fee. Most of which are substantial. I can't help but question the legitimacy of such a practice. The fees are expalined as being the method to pay for the program.
If an organization is truly a non-profit, there are opportunities for grants through a variety of government, as well as private agencies such as the Gates Foundation and many others.
I would really like to start my own, but am not sure where to start. I have read a little and know I need to have an advisory board. Other than that, it is all waiting for me to discover.
The big question is, what type of organization? Maybe you can offer some ideas. I want to make a real and sustainable difference. I don't think it is enough to offer charity. People that benefit must be provided with the resources to eventually be able to be self suffecient.
Please offer me some ideas as to what types of services would be of value. It doesn't matter how simple or unrealistic it may seem. All ideas you have are good ones I am sure.
