The flow of hope is everywhere.
| It requires buckling down to the hard work that needs to be done, stretching beyond your normal comfort zone and letting go of any cravings for immediate gratification. After 27 years in Food and Beverage industry, I am closer to my vision. If only for the the opportunity to realize that dream. Brought to me by the possibility of a Peer to Peer loan and the Eastside Revitalization Project. Rather than go the Bank or the Family and Friends route more and more people have discovered 'peer to peer' banking. Call it the developed world version of micro-lending. A new addition to the field is Zopa US which opened for business only this week. They partnered with some credit unions to add some stability and help spread the word.< “A bank is a place where they lend you an umbrella in fair weather and ask for it back when it begins to rain,” said the American poet Robert Frost. After all, as a cobbler and poet without a college degree, he probably could not have gotten a loan either. < And so...my friends, this is what I have been working on. I will share my dream with you.< The concept is vivid in my mind. Some years ago, while visiting my sister in Los Angeles, the two of us wandered into a Crepery in downtown L.A. Both delicious and unique. The chefs were making crepes at the back of the dining room. It was an experience that stayed with me, forever embedded in my mind, to emerge at a later date in time. That time is now !< The dining room which will feature large windows in the front and will have the ambiance of a French Bistro. Tables will be placed lengthwise as to not block the flow, each table will be covered in recyclable paper, no linen. There is an amazing restaurant in downtown Portland that covers the tables in paper, the patrons are given crayons to create their own individual artworks and some of the best are displayed on the walls to view while Jazz plays in the background as you dine ( I have borrowed this idea from them.) Through the windows you will see pendant lights hanging beautifully over each table.< A Wine Room will be built into the restaurant. A Wine Steward will be on hand to help in your choices and pairings. A step up from the dining room at the left, the Wine Room will boast built in wood shelving from floor to ceiling. I'm thinking all NW wines, but I may include some of my favorite French wines...< The menu will be, with a little help from my chef friends, Crepes for breakfast, lunch and dinner. Envision if you will, breakfast crepes stuffed with everything local, we have an abundance of berries and nuts here in the Pacific Northwest. Paired with salads and delicious soups, all things Oregon and Washington in the preparation, everything organic and all from local farmers. From berries to Chantrelles. Lunch and dinner crepes stuffed with indigenous seafood and cheeses, both in abundance in our region. We have Dungenous Crab and Bay Shrimp. There is nothing quite so delicious as a crab stuffed crepe, paired with a lovely Fume Blanc. Fresh local fruit and warm cheeses with baguette and local warmed honey will be an item on the appetizer menu, along with oysters, clams and shrimp. We have many amazing bakeries in the city, featured breads and desserts will come from one of them. I have a wonderful friend that owns her own coffee company, she buys only organic, fairly traded, Arabica beans, roasts and grinds them herself to create beautifully balanced and delicious coffee blends. She sells mostly at the local Farmer's markets and does special orders, delivered to your door, lovingly every Saturday. Her's will be the featured coffee. so, look out Laurel !!...the time is near. < For the humane and fair-minded treatment of other beings, there is more to my dream. A percentage of the profits will be given to a Veterans organization of my choosing. I never again, in my lifetime, want to see veterans, broken and hopeless wandering our streets in need of help and support, so I have chosen "Vets For Justice" http://www.vetsforjustice.com< "When you're in the military, they take good care of you," said a 23-year-old Iraq war veteran. "But now that I'm a vet, and, you know, I'm out of the military — not so good. Not so good."< There are, what seems like a million details, this only an outline of ideas.There will be rewards, but that's not the point right now. For some reason everybody involved is being called upon to make a heroic effort. Anything less will not be enough. Push has come to shove. | |

A YEAR OF PEACE...
A beautiful oil for the holiday season, Frankincense helps us ground and become centered on the Earth, with tranquility and clarity about our deeper values. Frankincense - recent research shows that it is effective for a variety of ailments. Respiratory tract: clears the lungs, helps with asthma, bronchitis, laryngitis, coughs, colds, etc.
For women: can be used to ease heavy periods, & is used for its calming effect during labor.
Also useful for rheumatism, & urinary tract problems.
Frankincense oil is used in various skin lotions for its rejuvenation for aging skin. It is a skin tonic -healing with sores, skin inflammation, wounds, scars, etc.
